How To Set Up Sending Amp Emails?

We've decided to try using interactive AMP blocks in our emails, using Markeaze for layout, but we don't send emails from our own domain; we use an ESP system that sends from its own gateway, substituting our name in the sender.

Is it possible for us to send AMP emails, or is this only possible when sending from our own address? And is there a way to determine which addresses will receive the AMP version and which will receive a fallback?

    And amp.dev's website (FAQ/email-support) has a long list of ESPs that support AMP.
