    Using STP, work with your students to identify/choose niches. Once the niche is picked, then brainstorm on products/services that would appeal to them.

    Get the students to design a restaurant for an imaginary town. Create a paper population with some characteristics like age, income, food preference, family size written on a slip of paper to be drawn from a bag. Once the restaurants are decided, draw 'customers' from the bag and allocate them to the restaurants based on preference/characteristic of each customer. Then see which restaurants win the greatest number of customers. Once they have the idea, share some statistics on the paper 'customers' to see if they can do better second time around, or work together to satisfy the greatest number of customers.
